Homemade Gelatin Marshmallows with Maple Syrup


Who doesn’t love the soft, fluffy texture of marshmallows? Instead of store-bought ones loaded with artificial ingredients, try making your own using just gelatin and maple syrup. These homemade marshmallows are healthier, naturally sweetened, and super easy to make. Plus, they’re perfect for both kids and adults to enjoy!

Ingredients

- 3 tablespoons gelatin
- 1 cup pure maple syrup
- 1/2 cup cold water (divided)
- 1 teaspoon vanilla extract (optional)
- A pinch of sea salt (optional)
- Tapioca starch or powdered sugar for dusting

Instructions


1. Bloom the Gelatin: In a large mixing bowl, sprinkle gelatin over 1/4 cup of cold water. Let it sit for 5 minutes to thicken.
2. Heat the Maple Syrup: In a saucepan, mix the maple syrup, the other 1/4 cup of water, and a pinch of sea salt. Heat until it reaches 240°F (115°C) using a candy thermometer.
3. Whip It Up: Pour the hot syrup into the gelatin mixture. Beat on low speed, then gradually increase to high. Whip for 10-12 minutes until thick and fluffy. Add vanilla in the last minute.
4. Pour and Set: Spread the mixture into a greased or parchment-lined dish. Let it set at room temperature for at least 4 hours.
5. Cut and Dust: Cut into squares and dust with tapioca starch or powdered sugar to prevent sticking.
